How to Butcher a Pig: Skinning. After the pigs are scrubbed and weighed, it’s time to skin them. We put them on a trailer with a board on either side to act like a cradle. Kinda like this. Then it was time to skin.

A pig is different than skinning a deer. Bleeding out, skinning and gutting a pig takes about an hour. Once the pig is skinned and gutted, the hard part is actually pretty well over, but the work is just beginning. Cutting the pig into 1 to 2-pound packages and vacuum sealing, along with chopping sausage meat into small pieces to fit through the grinder takes us hours in total.

But some other people don’t feel like it is at all. I guess it’ll be up to your own opinion as to whether you feel like you are riding a bike when skinning a pig or not.

Either way, the pig must be skinned. You’ll need a sharp knife, a wash bucket with soap and water, and a knife sharpener.
